They could be using the wrong jargon, or they might be searching for one thing when you know that they are really looking for something else. You have to target both types of keywords. Using the ones that are technically correct is good since you are going to get a lot of that traffic, but you also need to use the ones that are wrong because, no matter what they are searching for, those people do want your goods and services.

Finally, you have to decide if you want to search for broad terms or specific ones. Sometimes, the wide-ranging terms can be good because they get more searches. However, this also means that there is a lot more competition. You might be better off with a term that is more specific, that does not get searched as often, because you can rank higher in the search results and get a lot more people to click on your link. Try to find a balance between both types of search terms when determining what keywords to use.
